To make this soy sauce, we use only domestic soybeans, wheat, and salt. We use beautiful clear water, nurtured by the climate of Kanazawa city, to make this soy sauce. We are using the minimum raw materials required to make soy sauce, so you can enjoy the pure and natural taste of soy sauce.

We freeze dry our special soy sauce, "Moromi no shizuku", to make it into powder. You can use this just like salt, but less saline and good for your health. Because this product is not liquid, it is convenient to carry around, easy to preserve, and fresh flavor of soy sauce lasts long time. It is a new style "soy sauce spice". This product is made by mixing of "Moromi no shizuku" and grated ginger which is harvested in Kochi prefecture. Kochi prefecture is well known production area of ginger. You can enjoy a strong, savory taste without adding any other broth. The salt content of this product is about 12%, for your reference, generally soy sauce is about 16%.

By mixing soy sauce with 'koji', you can enjoy the savory taste of soy sauce and the sweetness of 'koji' at the same time. 'koji' can also help with your everyday cooking needs. 'koji' has the power to make meat and fish softer and also to make taste better. You can use this product for any kind of food. The salt content of this product is about 12%, for your reference, generally soy sauce is about 16%.
This is a special soy sauce for Sashimi, raw fish. This soy sauce is blended 'Koikuchi soy sauce', a dark colored soy sauce and 'Tamari soy sauce', a rich tasting soy sauce. 'Tamari soy sauce' has a stronger taste than 'Koikuchi soy sauce'. By blending these two kinds, a special "Sashimi shoyu" has been completed.

'Gensuke-Daikon' is one of 'Kaga yasai', kinds of vegetables that have been cultivated since 1945 only at Kanazawa city. 'Daikon' means Japanese white radish. 'Gensuke-Daikon' has shorter and rounded shape. Although common Japanese white radish has hot & sharp taste, 'Gensuke-Daikon' has sweetness & mild taste. Any kinds of edible oil is not added to this product. It is made by adding plenty grated 'Gensuke-Daikon', soy sauce and juice of apple & Japanese citron.
'Kinji-Sou' is one of 'Kaga yasai', kinds of vegetables that have been cultivated since 1945 only at Kanazawa city. The 'Kinji-Sou' is rich in vitamins and minerals. The leaf color of 'Kinji-Sou' turns pink by adding vinegar. The bright pink color of this dressing is natural color from 'Kinji-Sou' itself. It is non-chemical by using characteristic of ‘Kinji-sou'. This product is French dressing, which is the sauce made with oil, vinegar, salt and spice.
'Kanazawa-Shungiku' is one of 'Kaga yasai', kinds of vegetables that have been cultivated since 1945 only at Kanazawa city. 'Shungiku' means 'garland chrysanthemum'. Compared with common 'garland chrysanthemum', ‘Kanazawa-Shungiku' has, as characteristic, the texture that it is milder and softer. It gains rich taste and flavor by adding green tea powder. This is Caesar dressing, which is the creamy sauce with garlic, salt, pepper, oil, mayonnaise and powder cheese.
This dressing is made with roasted sesame and our soy sauce. You can enjoy special sesame dressing which is made by soy sauce company. Compared with other sesame dressing, it is rich in flavor, more sticky and more creamy.
This dressing is using onions which are harvested on 'Noto-jima' island in Ishikawa prefecture. The onions of 'Noto-jima' is sweeter than the onions of other places. It is also using "Ishiru", which is the one of the local unique seasonings in Ishikawa prefecture. "Ishiru" is the sauce made by fish pickled in salt. It is like "nam pla", Thai fish sauce. This product is using various ingredients of Ishikawa prefecture. A little bit of ginger is being an accent of this dressing and it gently arouse your appetite.

This dressing is made by mixing of our soy sauce and domestic white radish mainly, and a little bit of green perilla is added as accent. To enjoy the texture of it, it is using the white radish which is grated roughly. The 40% of content is grated white radish. Any kinds of edible oil nor any synthetic seasonings are not using for this product. This is very healthy and simple taste dressing.

The seasoning "Ponzu" is the liquid seasoning that is making with soy sauce, vinegar, soup stock of dried bonito and/or 'Konbu' (a kind of kelps), 'Mirin' (a type of sake with low alcohol and high sugar content) and so on. The seasoning "Ponzu" is normally using vinegar, but we use 'yuzu juice'- juice of japanese citron. By using 'yuzu juice', the taste become fruity, instead of the peculiar sharp sour taste of vinegar. We recommend this "Ponzu soy sauce" to those who do not like the sharp sour taste of vinegar.
You can make authentic Japanese food easily at home by using only this product. For example, 'udon', 'soba' and any Japanese foods that are using Japanese soup stock as its base. This is a very convenient product, just dilute it with boiling water according to your preference.
